In creating nigiri sushi, Yohei introduced a way to eat fresh sushi. No longer was the flavor profile dominated by the fermentation process; now the taste of the ingredients could really shine through. And by eliminating all the time it took to make sushi, it was now a food that could be eaten on the go.
